Today was the 4th day of our 5 day Eat the Rainbow Fruit & Veggie Challenge. Beautiful meals were pictured by the participants. I have had salad for breakfast, as a significant part as I had other items too, especially my Kasha Breakfast Pudding with blueberries and more. I favor savory breakfasts over high carb breakfasts. You can ask me why.. The salad is so refreshing and energizing. I can’t fathom why we don’t do it much more often. I do eat some Scandinavian cheeses and occasionally add some cubes of Danish Havarti with Dill. A nice texture, taste and protein addition. Breakfast should supply you with a substantial amount of your daily protein needs, in the 30% range. What did you have in the green category today? Bok choy, snap peas, broccoli, leaf lettuce, avocado were my green list today. Bon appetit…!!!
